Ingredients: (4 servings)

500 g of fresh Huétor-Tájar asparagus (specific denomination) or canned asparagus (1 can of the Los Monteros brand)

¼ sautéed clams

Fried bread

100 g fried almonds


Extra virgin olive oil


Wild asparagus and clams dressing


Fry the garlic, almonds, and bread in a pan with a little virgin olive oil and put aside.

Sauté the asparagus in the same oil, then blend everything together in a mixer and place in a dish.

Garnish with sautéed clams, some asparagus, and pieces of fried bread.
