Ingredients: (4 servings)

Wild asparagus (16 units)

Tempura flour (200 g)

Ice-cold water (0.3 dl)


Oil for frying

Soy sauce (1 dl)

Wild asparagus marmalade (20 g)

Wild asparagus in tempura and sweet and sour dressing


Mix the tempura flour with the cold water. Season with salt and put aside.

Mix the soy sauce and asparagus marmalade. This dressing will go well with the asparagus.

Lastly, coat the asparagus in the tempura dough and fry on a medium heat. They should have a crispy and subtle texture.

Serve with the soy sauce and asparagus marmalade dressing.
