Ingredients: (4 servings)


1 bunch of Huétor Tájar wild asparagus

3 cod fillets weighing 300 g each

Los Monteros tomato marmalade

3 garlic cloves

Extra virgin olive oil

Salt

Vinegar

COD FILLET WITH ASPARAGUS RECIPE

Preparation:


Separate the asparagus tips and place them in a vinaigrette for several hours.

After removing the bones from the cod, fry the garlic in casserole dish. Once fried, remove the garlic and add the cod. Cook at a moderate temperature.

When the fillets are cooked, removed them and place them on a plate on a base of Los Monteros tomato marmalade and some extra virgin olive oil.

To finish, remove the asparagus from the vinaigrette and place them on the cod fillets. Drizzle the asparagus with some extra virgin olive oil.
